To make this scrumptious recipe, you’ll only need baby back pork ribs, barbeque sauce, ground cumin, paprika, chili powder, as well as salt and pepper to taste. Yes, that’s it! And cooking these delicacies is almost as simple as the list of ingredients.
Begin with preheating the grill, aiming for high heat. Then, start prepping the ribs and, when you’re done with trimming the membrane sheath from the back of each rack, combine chili powder, paprika, cumin, salt, and pepper in a jar, mixing them well. When you have a nice blend, sprinkle it on the ribs, rubbing on both sizes.
Put the ribs on the grill and, if you are using briquettes, make sure they are placed away from the coals. Close the lid and cook the ribs for an hour without opening it. Ready? Start with the marinade ingredients. You will need boneless beef short ribs, finely chopped garlic cloves, finely grated, fresh ginger, and groundnut oil. And, for the salad, make sure you have spring onions with ends trimmed, fresh mint leaves or watercress, extra-virgin olive oil, rice vinegar, honey, freshly ground black pepper, and of course, a pinch of salt.
Let’s prepare the ribs first! Begin with preheating the barbecue and trimming the ribs. Then, grab a baking dish and mix 2 tbsps of the ginger, soy, groundnut oil, and garlic before adding the ribs. Cover them in the marinade and let them sit in the fridge for at least 30 minutes. If you have time to spare, you can let them rest for up to 4 hours. Afterward, season them with salt and pepper, throw them on the BBQ, and grill them until tender, for about 3 to 4 minutes on each side. Oh, what a delicacy!
Ready to make the salad? Sprinkle or brush the onions with oil, add salt and pepper, and grill them for a couple of minutes on each side. Mix olive oil, vinegar, honey, and ginger, seasoning with salt and pepper. Then, after chopping the spring onion, add it to the bowl, throw in the mint leaves to watercress, and toss.
