No Meat Wednesday: BBQ Recipes for Vegetarians

Whether you are a vegetarian, planning to be one, adventuring into a “meatless January” experience, or just giving up animal products once a week, sacrificing some of your favorite dishes might be difficult, especially if you love BBQ afternoons with your family. Fortunately, while pulled pork sandwiches and brisket are not on the menu, there are plenty of vegetarian and even vegan barbecue recipes your whole family can enjoy.

BBQ Butternut Squash Steaks
When you say barbecue, you say steak, unless you are planning a vegetarian grilling session! But, what if we told you you can have a delicious steak even if it’s not made of….meat? Whether you are someone who can’t imagine eating a regular steak or you are known for your steak cravings, you must give this southern BBQ butternut squash steak a try. Not only is it mouthwatering and very healthy, perfect for a January diet, but it’s also a really easy-to-make dish. Ready?
Let’s begin with your shopping list. You’ll need seeded butternut squash, cooked wild rice, coconut oil, maple syrup, or, even better, honey, paprika, garlic and chili powder, sea salt, and, for garnishing, fresh parsley.
Preheat your barbecue and, after drizzling with melted coconut oil, place your butternut squash halves on the grill. Drizzle the honey, as well, and let it grill while you mix together the paprika, chili powder, garlic powder, and salt in a bowl. Sprinkle the mixture on top of the squash. It will take about 30 minutes to cook, and you can remove it when it’s tender. Enjoy it with wild rice, and don’t forget to garnish with freshly cut parsley. Deliciously healthy!

Halloumi Burgers
A BBQ party without burgers? This might be sad news even for vegetarians! But if you want to have meatless grilling sessions, you don’t have to give up the joy of indulging in a tasty, juicy burger. You only need to replace the meat with something as good or, as many say, even better. And we vote for halloumi burgers in brioche buns. They make a fast and easy lunch, and they promise to satisfy your whole family, especially the vegetarians.
You’ll need halloumi cheese, cut into thick slices, brioche buns, hummus, thinly sliced tomatoes, lettuce leaves, fresh tomato salsa, and olive oil.
Start with heating the barbecue and, when the coals become glowing white-hot, add the halloumi slices brushed on both sizes with olive oil. Cook them for a couple of minutes on each side until golden. Meanwhile, split the buns and toast them briefly on each side before spreading hummus on the bottom halves. Then add the tomato, grilled halloumi slice, lettuce, and salsa. Top with the other half of the bun and indulge!
Vegan Tempeh and Pineapple Kebabs
Who says you can’t enjoy a good, ol’ kebab during your “no meat Wednesday”? Not us! We love tempeh, and we believe it works brilliantly with pineapple, creating a juicy alternative to your usual BBQ skewers. If you haven’t heard of tempeh, it’s about time to add this delicacy to your menu. Originally from Indonesia, tempeh is made from cooked and fermented soybeans.
Besides tempeh and pineapple chunks, you’ll need umeboshi paste, Chinese black vinegar, dark soy sauce, toasted sesame oil, Shaoxing wine, garlic, dried chili flakes, and Chinese five-spice, all for the marinade. Also, don’t forget about green onion, coriander leaves, and a pinch of dried chili flakes, to serve.
Making the marinade is so easy! Just put all the ingredients into a food processor, whizzing until the mix is smooth. Then, start making the skewers. Cut the tempeh into cubes, add them to a bowl, and pour the marinade over before covering them. Make sure everything is covered in the marinade before putting the bowl in the fridge for 30 minutes. After 30 minutes, remove the tempeh from the fridge, slice the pineapple and start making your kebabs!
When ready, put them on the grill and let them cook, rotating every few minutes and brushing with more marinade once in a while. When the tempeh is nicely browned, and the pineapple caramelized, remove it from the grill, top it with coriander, spring onions, and chili flakes and enjoy. Bon Appetit!
