Our Picks for a Fancy December BBQ Party

December has finally arrived, and we can all start welcoming the festive spirit. But, before we begin decorating our homes and thinking about the Christmas menu, we have a couple of weeks to spend enjoying a few more family barbecues.
With proper clothing, a heat source, your good ol’ grill, maybe upgraded with a high-quality smoker, and some delicious recipes, you can still host a memorable backyard party. And, if you’re ready to start planning, we’ve got a very fancy menu that will definitely impress your guests.
A Chic Appetizer: Caprese Stuffed Portobello Mushrooms
Welcome your guests with a garlicky starter that will tickle their taste buds, announcing a memorable grilling experience. They will love these delectable Caprese Stuffed Portobello Mushrooms!
Your main ingredients are, of course, the Portobello Mushrooms. Remove their stems before washing and drying them thoroughly with a paper towel. Add thinly sliced fresh mozzarella cheese balls and a cup of cherry tomatoes or grapes, also thinly sliced, on the list.
For the garlic butter, you’ll need crushed garlic, butter, and freshly chopped parsley. And, in case you don’t want to use a stored bought balsamic glaze, make sure you have balsamic vinegar and brown sugar.
Preheat a grill to medium-high heat. Combine the Garlic Butter ingredients and melt them in a small saucepan until the garlic becomes fragrant. When ready, brush the mushrooms before filling them with mozzarella cheese and grapes or tomatoes. They’re now ready for grilling! It will take about eight minutes for the cheese to melt. Serve them topped with basil, sprinkled with salt, and drizzled with balsamic glaze. Delicious!
Whole Grilled Lobster
As we promised, we prepared a sumptuous menu, so there should be no surprise the main dish is lobster. We LOVE grilled lobster. It’s rich, creamy, super filling, and so easy to prepare!
You’ll need a whole lobster, olive oil, unsalted butter, zest of a lemon, finely chopped garlic and parsley, crushed red chile flakes, as well as salt and pepper to taste.
Leave the lobster and olive oil aside and combine the rest of the ingredients in a bowl. Then, grab a cleaver and split the lobster in half through its head and tail. Break off the claws and get rid of the yellow-green tomalley inside. Once your lobster is prepared, put it on a baking sheet, flesh side down. Put the cracked claws right next to the lobster halves and drizzle everything with olive oil.
Heat a charcoal grill, place the lobster on it, cooking until slightly charred. It will only take 2-3 minutes. Grab the garlic-parsley butter and, after flipping the lobster over, spread it using a spoon. Grill for 3-5 minutes more until the lobster meat is tender. Bon Appetit!
Baked Apples on the Grill
We can’t have a party without dessert, can we? As you know, we are crazy about s’mores, and we believe they’re a fantastic BBQ dessert. If you have kids among the guests, you’ll conquer them with this sweet delicacy! You can also invite them to join the making process, and, for this, we suggest you have a proper, kid-friendly set of roasting sticks.
While s’mores might be kids’ favorite, you can impress your guests with a simple but delicious wintery dessert like baked apples on the grill. You’ll only need cored medium tart apples, raisins, sweetened shredded coconut, ground cinnamon, and brown sugar.
Place each apple on a piece of heavy-duty foil, combine all the ingredients, and spoon the mix into their centers. Fold the foil over them, sealing it carefully. Grill the apples over medium heat for about half an hour. That’s it, your dessert is ready. Enjoy!
