The Ultimate New Year's Eve BBQ Menu

December celebrations might be over, but winter is still here, and we have to continue taking advantage of our cozy patio, beautifully lit garden, and, of course, BBQ area. And, when it comes to food, how about grilling something as delicious as our festive delicacies but with a healthier twist?

Citrus-spiked Sea Bass
Another fish dish we love because it’s both healthy and tasty is sea bass with citrus flavor. It’s perfect for a fancy garden party but also a cozy weekend family gathering. Not to mention it’s so easy to make!
You’ll need scaled and gutted small sea bass, a few large oranges and the zest of a lemon, olive oil, and, for the salad, segmented oranges, watercress, capers, pitted and chopped green olives, lemon juice, and olive oil.
Mix the oranges and lemon zest with olive oil, drizzle the blend over the fish, and season. Cut the oranges and put the slices on the grill, arranging them in groups for the length of each fish. Once they are charred, flip them over and put the fish on top of them. This trick will keep your fish from sticking!
Cook the fish, turning it carefully on each side, for about eight minutes. It’s ready if, when prodded, the flesh easily flakes away. In the meantime, make the salad, combining the ingredients in a bowl before seasoning and stirring in olive oil. Serve the fish with this refreshing salad!
Seafood, Pineapple & Coconut Kebabs
If you indulged in meaty specialties during the jolly season, in January, embrace fruits and veggies but don’t miss the chance to spoil your taste buds with treats from the ocean. So, at your next barbecue party, pamper your guests with our seafood, pineapple, and coconut kebab.
For this luxurious goodie, you’ll only need a few unpeeled raw king prawns, skinned and cut into pieces white fish and salmon, coconut milk, pineapple chunks, desiccated coconut, olive oil, and, for serving, lime wedges. You’ll also need skewers, and this might be a great time to give the Carpathen Roasting Sticks a try. They’re made of high-end materials and so kid-friendly that little ones can cook their food!
Once you have everything gathered, you can fire up the barbecue. While the grill is heating, mix the fish, prawns with coconut milk and seasoning in a bowl before threading onto skewers. Don’t forget to add the pineapple chunks! Then, roll the kebabs in desiccated coconut, sprinkle a bit of oil, and put them on the grill. Cook for a few minutes on each side and, when the fish is cooked through and prawns turn pink, serve them with lime wedges. Yummy!
Turkey & Coriander Burgers with Guacamole
If fish is not your cup of tea and all you crave is a juicy burger, we have a surprise for you. The turkey burger with guacamole will meet your culinary expectations and keep you on the healthy track at the same time.
First, gather the ingredients. You’ll need cut in half ciabatta rolls, turkey mince, an avocado, finely chopped red onion and coriander, Worcestershire sauce, fresh breadcrumbs, lime juice, deseeded and chopped chili, and sunflower oil.
Begin with mixing the mince, breadcrumbs, half of the chopped onion and coriander, Worcestershire sauce, and seasoning, and then form the burgers. Let them rest while you make the guacamole. Mash the avocado and mix it with the rest of the onion and coriander, lime juice, chili, and seasoning.
Heat the barbecue and grill the ciabatta bread, cut-side down for a minute. You want it warm! Then, after brushing them with oil to avoid sticking, put the burger on the grill and cook for about seven minutes on each side. When ready, feel the rolls with the burgers and guacamole. Bon Appetit!
