Sweeten Up Your Fall: 3 Backyard Smoked Desserts
15 September, 2021 by Ana
Fall is one of the best seasons for memorable family outings. Whether you are a hiking enthusiast, you love spending evenings in the middle of nature, around the campfire, or your Sundays are synonymous with backyard barbecues, food will always be a big part of your family and friends' gatherings.
If you are outdoorsy, you probably have a lot of knowledge about open fire cooking, but today we are not focusing on the main meals. Instead, we will be talking about some of our favorite smoked desserts. There is no party without something sweet after all, is it? If we agree, let’s see how you can sweeten up your fall and become a backyard bbq dessert legend.
Chocolate Fondue & Toasted Marshmallow
For some, the most vivid recollection of a camping trip is the irresistible, sweet, and smoky flavor of marshmallows, melted into a gooey, long-lasting memory of the taste buds. We can say that a single bite of marshmallow can take many on a journey back to childhood. If you want to take that deliciousness and upgrade it to an elegant backyard bbq dessert, just make chocolate fondue and toasted marshmallows. Everybody you share it with will praise your skills without even guessing how easy the recipe is.
First things first, gather the ingredients. You’ll need 400g dark chocolate, 85g unsalted butter, 284ml carton double cream, 300ml milk, and, of course, a bag of marshmallows, the special guests of the party.
Mix the chocolate, butter, cream, and milk into a saucepan, heat gently, and stir until you obtain a smooth melted chocolate sauce. Then, take your roasting sticks out of the box, thread the marshmallows onto them, and start toasting. Once they’re ready, you can dip into the fondue and indulge. So easy, so delicious!
Smoked Chocolate Chip Cookies
Let’s say you are planning a garden party this week. You already decorated the backyard, the grill and smoker are all set, your irrigation system is ready for the kids to enjoy running barefoot through the sprinklers, and you decided on the menu. But, what about dessert? Sure, you can order a cake or even go healthy and serve everybody fruits. However, making something on the spot would bring the party to a different level. And we have a feeling that nobody can resist chocolate, especially in the form of smoked chocolate chip cookies.
To amaze everybody’s taste buds, you only need your favorite store-bought cookie dough ( or you can even adventure into making your own) and a heavy-duty aluminum foil.
Begin your process by turning on the pellet grill to 275°F, then focus on breaking apart pre-serrated pieces of cookie dough, which you’ll spread on the sheet of aluminum foil. All that is left to do is cook your goodies until they reach the desired doneness ( for 18-20 minutes or follow the instructions on the dough package). Everybody will love these treats, especially the little ones!
Smoked Pineapple Cobbler
Marshmallow fondue and chocolate chip cookies are yummy dessert ideas for your outdoor escapades, no matter if we are talking about parties in your backyard or camping trips with your gang. They are fast, easy to make, and you don’t need too many ingredients or supplies. But if you want to go even further and completely surprise everyone around, we have a slightly more complex recipe. This smoked pineapple cobbler is a perfect choice for a garden fiesta, not only because it tastes mouth watering but also has a breathtaking appearance. And between us, making it looks more complicated than it actually is!
Before you begin gathering the ingredients, make sure you have an aluminum pan in your house. Then, get ready for this sweet culinary experience. You will need a cup of all-purpose flour, a cup of sugar, a tbsp baking powder, 3/4 cup of buttermilk, a stick of unsalted butter, a tsp of vanilla extract, a pinch of salt, and, of course, 20oz can of drained pineapple chunks.
After preheating your pellet grill to 375°F, mix flour, salt, sugar, baking powder, milk, and vanilla extract in a bowl and stir until it becomes a smooth batter. Then, melt the stick of unsalted butter in the aluminum pan on the pellet grill. Make sure you spread the butter evenly in the pan and arrange the pineapple cupcakes over it. And your cobbler is ready for cooking, and it will take around 25 minutes to be done! You will notice the top is puffed and golden brown, and the pineapple chunks have fallen to the bottom of the pan.
