There are only a few days left until one of the most known global celebrations, New Year’s Eve, the moment we say goodbye to the year that ends and welcome the new one with joy and optimism. Whether you choose to spend this special day with your family, throw a party for your friends, or have a romantic celebration, nothing brings happiness and people together like a delicious meal, especially if it’s a grilled feast.

Bruschetta with Tomatoes and Basil
We love tasty appetizers, especially those fast and easy to make, like the bruschetta with tomatoes and basil. They will bring elegance to your dinner table and a fresh starting experience to your guests. You can even toast the bread before and store it in an airtight container. Keep it at room temperature and then, right before the party, just prepare the topping.
You will only need chopped tomatoes and sweet pepper, thinly sliced basil leaves, minced garlic, extra virgin olive oil, freshly ground black pepper, and salt. Make sure you also get thickly sliced baguette-style French bread.
Start with the topping, combining the peppers, tomatoes, basil, garlic, salt, and a bit of olive oil in a bowl, and set it aside. Now, brush one side of each bread slice with olive oil and black pepper and place them on the grill, oiled side up. Cook them until lightly browned and top them with tomato mixture. Make sure you serve within 45 minutes. Delicious!
Margarita Grilled Shrimp
This is one of our favorite recipes, not only because of its irresistible sweet and spicy glaze, but because it's so easy to make you’ll keep adding it to all your party menus.
Make sure you have all the ingredients gathered. You’ll need a few pounds of peeled and deveined shrimp, chopped cilantro, minced garlic and jalapeño, olive oil, tequila, and triple sec.
Put the shrimp aside and combine the rest of the ingredients in a mixing bowl. Then, add the shrimp, letting it marinate in the fridge for a few hours. Once it’s ready, remove the shrimp and bring the marinade to boil in a small saucepan. Then, reduce the heat and let it simmer for 10 minutes.
Grill the shrimp using roasting sticks for 5 to 6 minutes. Don’t forget to turn occasionally! When ready, remove from the grill, pour sauce over it, garnish with chopped cilantro, and serve immediately.
Smoked Stuffed Avocados
As mentioned before, together with shrimp, avocado is a special guest to this New Year’s Eve party, but not on its own! Smoked and stuffed with cheese, pulled pork, and topped with a beautifully cooked egg, this avocado will amaze the taste buds of all your guests!
Make sure you have cooked pulled pork, shredded cheese, fresh salsa, finely chopped cilantro, Quail eggs, and, of course, whole avocados.
Turn on the smoker, and, setting the temperature to 375℉, preheat with the lid closed. Combine the cheese, salsa, cilantro, and pull pork in a mixing bowl. Remove the avocado pits and place the pork mixture on top. Then, put the avocados on the grill grates, close the lid, and let it cook for about 25 minutes. Use a spoon to make a “nest” in each avocado, and crack the quail egg into it. Close the lid and cook for a few minutes more until the egg is ready. Oh, what a delicacy!
Instead of Dessert: Prosecco-Peach Punch
We love desserts, but we’re talking about such a special celebration! So how about switching to a sweet, tasty champagne punch with pureed peaches instead? It’s divine!
You’ll need frozen unsweetened peach slices, lemon or lime juice, sugar, orange juice, ice, and of course, a bottle of Prosecco. You can use other types of sparkling wine and, if alcohol is not something you want, use unsweetened pineapple juice.
Put peaches with their juice and sugar in a blender, processing until smooth. Add the pureed peaches to a 2-quart pitcher, mixing it with lemon and orange juice. Before serving, pour Prosecco into the mixture and enjoy it in a glass over ice. Cheers!
